Dished up chicken In a basket

this is your typical left over fried chicken and you need a quick meal, recycling poultry to another delightful dish then I call this dished up poultry
  Leftover chicken 1 Kilogram, breaded
  Julienned carrots 250 Gram
  Red onions 45 Gram, minced
  Minced ginger 45 Gram
  Grated radish 50 Gram
  Rice wine vinegar 30 Milliliter
  Wasabi 5 Gram
  Kikkoman soy sauce 75 Milliliter
  Paprika 1 Teaspoon
  Fish sauce 1 Teaspoon
  Chicken stock 500 Milliliter
  Pepper To Taste
  Muscovado sugar To Taste

as in all poultry having kept the chicken left over in the freezer transfer this in the chiller to thaw.

1. saute onions , ginger and the spice all together add the soy sauce and the chicken stock

2. allow this to simmer for a good 3 minutes ad the rice wine wasabe and the chicken simmer for another 20 minute until the sauce thickens then add the vegetables cook further until the carrots become fork tender, check seasoning with pepper and add a little mascovado to balance the flavors

3. to serve remove the vegetables first and lay it down in a shallow serving dish and spread it to look like a nest, remove the pieces of the breaded chicken place it on top of the vegetables (carrot) and nape it with the sauce to garnish drizzle some freshly chopped Italian parsley. this can be enjoyed with your favorite pasta or noodle dish a recipe soon i will be sharing with you. When I was in high school my good old man trained me and my siblings to be lucrative and enterprising so he introduced to us our agri based projects and started a decent business. this was a 500 bird capacity broiler back yard farming. So the dish sprung from the very source our farm. We loved our moms breaded fried chicken and I also enjoyed experimenting on how to make a delicious concoction from a good let over. so here is the dish that my sister always asked me to do the dish again and again and again
