Vietnamese Bánh Mì Gà

Ingredients
  Sugar 1⁄4 Tablespoon
  Rice vinegar 3⁄4 Cup (12 tbs)
  Fish sauce 1⁄4 Cup (4 tbs)
  Salt/Shallot 1⁄4 Tablespoon
  Carrot 2 Cup (32 tbs), julienned
  Daikon radish 1 Cup (16 tbs), julienned
  Star anise 1 Small
  Five spice 1⁄2 Tablespoon
  Soy sauce 1⁄2 Cup (8 tbs)
  Seasame seed oil 1 Tablespoon
  Onion/Shallot 1⁄4 Cup (4 tbs)
  Garlic clove 2 Medium, minced
  Ginger 1 Small, minced
  Brown sugar 1 Tablespoon
  Chicken breast boneless 1⁄2 Pound, butterfly
  Pate chicken mayonaise 1 Tablespoon
  French baguette/French bread 1 Small
  Bahn mi sauce 4 Tablespoon
  Onion rings 5 Small, sliced
  Green chili peppers 2 Small
  Cucumber 1⁄2 Small
  Cilantro 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1.In a big bowl put rice vinegar ,sugar ,salt ,carrot,radish
2.Cover it with thin transparent sheet, refrigerate and marinade for 6 to 24 hours
3.In another small bowl grind star anise and all spice, add to that soy sauce ,fish sauce, sesame seed oil,onion,garlic,ginger and brown sugar.Mix well
4.Put the chicken breast in it cover it with a thin sheet.Refrigerate and marinade for 2 to 24 hours
MAKING
5.The marinaded chicken can be pan fried ,grilled or broiled.It can be cut into stripes ,shredded or can be kept whole
6.Take a french bread and warm it for around 5 minutes in the oven at around 350F/170C
7.Cut it length wise and hollow out
FINALIZING
8.Make banh mi sauce by mixing together 4 parts of soy sauce ,one part fish sauce and one part sesame seed
oil
9.Drizzle this sauce on the bread ,spread pate mayonnaise, add to that some onion rings ,green chili peppers,cucumber, cilantro, pickled carrot and radish and some sriracha sauce (optional)
SERVING
10.Cut it into pieces and serve with sauce

Can try different fillings like pork,egg and tofu
