Chicken in Patty Shells
|Frozen patty shells||10 Ounce (1 package)|
|Whole chicken breasts||1 1⁄2 Pound, boned and skinned (3 breasts)|
|Canned condensed cream of chicken soup||10 3⁄4 Ounce (1 can)|
|Dry sherry||1⁄4 Cup (4 tbs)|
|Heavy cream||1⁄4 Cup (4 tbs)|
|Salted peanuts/Salted almonds||1⁄2 Cup (8 tbs)|
|Frozen chives||2 Tablespoon, chopped|
1 As per the package directions, bake patty shells.
2 In the meanwhile, cut chicken breasts into 2-inch pieces.
3 In a Dutch oven, heat 2 tablespoons butter .
4 Add in chicken and cook over medium heat, covered and stirring occasionally, for 10 minutes.
5 Add undiluted cream-of-chicken soup, sherry, cream, salted peanuts and chives; bring to a boil, stirring.
6 Reduce the heat, and simmer, uncovered for 5 minutes.
7 Serve in patty shells.
