Battered Chicken With Walnut Stir Fry

Ingredients
  Whole chicken breasts 2 (raw)
  Soy sauce 1 Tablespoon
  Dry sherry 3 Tablespoon
  Salt 3⁄4 Teaspoon
  Sugar 1 Teaspoon
  Cornstarch 4 Tablespoon
  Egg 1 , beaten
  Special oil 1⁄4 Cup (4 tbs)
  Blanched walnuts 1⁄4 Cup (4 tbs)
  Garlic 1 Clove (5 gm), minced
  Powdered ginger 1 Teaspoon
  Sliced bamboo shoots/Bean sprouts 1 Cup (16 tbs)
  Boiling water 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1 Remove the skin and bone from the chicken and cut in to 1 inch squares.
2 In a bowl, combine the soy sauce, sherry, salt and sugar.
3 Add the chicken to the mixture and marinate for 30 minutes.
4 Turn the chicken and baste a few times.

MAKING
5 Drain and reserve the marinade.
6 Roll the chicken in the constarch and then dip in the egg.
7 In a skillet, heat the oil and brown the walnuts in it. remove.
8 In the same skillet, brown the chicken pieces in the remaining oil.
9 Add the garlic, ginger, bamboo shoots (or bean sprouts), water and reserved marinade.
10 Cook covered, for 15 minutes over low heat.
11 Mix in the walnuts and cook for another 1 minute.

SERVING
12 Serve hot.
