|Broiler||2 1⁄2 Pound, quartered|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Garlic||1⁄4 Teaspoon, minced|
|Special oil||2 Tablespoon|
|Lemon juice||2 Tablespoon|
1 Wash the chicken throughly and dry it.
2 Rub a mixture of salt, pepper and garlic on the chicken and then brush with oil and lemon juice.
3 Allow to stand for about 60 minutes.
4 In a broiling pan, on a rack place the chicken skin side down.
5 Broil in a hot broiler for 30 minutes or until tender.
6 Turn the skin side up after 15 minutes.
7 Serve hot.
