Chicken And Almonds

Ingredients
  Oil 3 Tablespoon
  Raw chicken breasts 2 , diced
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Soy sauce 2 Tablespoon
  Diced celery 1 Cup (16 tbs)
  Peas 1 Cup (16 tbs) (fresh or frozen)
  Diced onions 1⁄2 Cup (8 tbs)
  Canned button mushrooms 4 Ounce (1 can)
  Hot chicken broth 1 Cup (16 tbs)
  Cornstarch 1 Tablespoon
  Water 2 Tablespoon
  Blanched toasted almonds 1⁄2 Cup (8 tbs)
Directions

MAKING
1) In a deep skillet, sauté the chicken for 3 minutes, stirring almost constantly.
2) Add the salt, pepper, soy sauce, celery, peas, onion and mushrooms.
3) Cook for 2 minutes and stir in broth.
4) Cover and simmer for 5 minutes.

FINALIZING
5) In a bowl, mix together the cornstarch and water.
6) Stir the cornstarch mixtures into the chicken mixture, until thickened.
7) Add almonds and remove from heat.

SERVING
8) Serve hot on the bed of rice.
