Seasoned Crumb Chicken
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Crushed rich round crackers||3⁄4 Cup (12 tbs) (16 Crackers)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Dried parsley flakes||1 Tablespoon|
|Garlic powder||1⁄2 Teaspoon|
|Quartered frying chicken||3 Pound|
1 Place butter in 12 x 7-inch glass baking dish.
2 Microwave about 1 minute on 7 (MED. HIGH), or until melted. Combine remaining ingredients, except chicken, in flat dish. Roll chicken in melted butter, then in seasoned crumbs. Place chicken pieces, skin-side-up and thick edges toward outside, in buttered baking dish. Sprinkle with remaining bread crumbs.
3 Microwave 20 to 25 minutes on HIGH, or until meat cut near bone is no longer pink (about 180°F). Let stand 5 minutes before serving. 4 to 6 Seryinc
