Chicken a la King
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Mushrooms||1 Cup (16 tbs)|
|Mushrooms||1 Cup (16 tbs), sliced|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Chicken stock||1 Cup (16 tbs)|
|Half and half||1 1⁄2 Cup (24 tbs)|
|Pimiento||1⁄2 Cup (8 tbs)|
|Pimiento||1⁄2 Cup (8 tbs), diced|
|Chicken||3 Cup (48 tbs), diced (Cooked)|
|Chicken||3 Cup (48 tbs)|
|Egg yolks||2 , slightly beaten|
|Hot sauce||To Taste|
1)In a blazer pan, heat butter on direct heat.
2)Add mushrooms and cook until tender for about 5 minutes.
3)Add flour, stock and half and half milk. Mix well.
4)Put the pan on hot water and cook until sauce is thick and smooth. Stir frequently.
5)Add pimiento and chicken. Heat thoroughly.
6)Add hot sauce into the egg yolks and mix with remaining sauce. Mix until smooth and hot.
7)Serve the sauce on crispy waffles.
