Zesty Oven Barbecued Chicken
|Chicken pieces||3 Pound|
|Cayenne pepper||1 Pinch|
|Vegetable oil||2 Tablespoon|
|Onion||1 Large, finely chopped|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Ketchup||3⁄4 Cup (12 tbs)|
|Fresh lemon juice||1⁄4 Cup (4 tbs)|
|Worcestershire sauce||1 Tablespoon|
|Dijon mustard||1 Tablespoon|
|Chili powder||1 Teaspoon|
In small saucepan, heat oil; cook onion until softened but not browned.
Stir in brown sugar and cook over low heat, stirring constantly, until sugar has dissolved
Remove from heat and stir in ketchup, lemon juice, Worcestershire, mustard, chili powder and cayenne.
In shallow baking dish large enough to hold chicken pieces in single layer, arrange chicken skin side down.
Pour Zesty Barbecue Sauce over and bake, uncovered, in 350°F (180°C) oven, basting occasionally.
After 30 minutes, turn chicken pieces over and continue to baste occasionally.
Bake for 30 minutes longer or until chicken is tender when pierced with fork.
