Skillet Chicken Waldorf
|Olive oil/Vegetable oil||4 Teaspoon|
|Skinned boned chicken breasts||10 Ounce, cut into cubes|
|Sliced red onion||1 Cup (16 tbs)|
|Sliced celery||1 Cup (16 tbs)|
|Golden apple||1 Small|
|Golden raisins||2 Tablespoon|
|Chopped walnuts||1⁄2 Ounce|
|Water||1⁄4 Cup (4 tbs)|
|Instant chicken broth and seasoning mix||5 Ounce (1 Packet)|
In 10-inch nonstick skillet heat oil; add chicken and saute over medium heat until browned, about 3 minutes.
Add remaining ingredients except water, broth mix, and lettuce; cook, stirring frequently, until vegetables and apple are tender-crisp, 2 to 3 minutes.
Add water and broth mix and, stirring frequently, bring to a boil.
Reduce heat to low and let simmer for 5 minutes.
To serve, line serving platter with lettuce leaves and top with chicken mixture.
