Filet Mignon And Grilled Chicken With Marsala Demi Glace

Ingredients
  Petit fillet mignon 2 (4 ounce)
  Chicken breast 2
  Olive oil 30 Milliliter
  Onion 30 Gram, chopped
  Leek stick 1⁄2 , chopped
  Celery stem 1 , chopped
  Garlic 20 Gram, chopped
  Butter 30 Gram
  Marsala 30 Milliliter
  Beef base 25 Gram
  Refined flour 30 Gram
  Water 250 Milliliter
  Salt To Taste
  Pepper To Taste
Directions

Marinate chicken & beef steak with salt, pepper & oilve oil & grill it till its done.In case of beef it depends upon what doneness u want.

For sauce:

Melt butter in a pan.Saute onion,garlic,leeks & celery for couple of minutes.
Add refined flour into it & saute it for a while.
Deglaze it with marsala.
add water into it & then the beef base.
simmer it for 6 to 8 minutes till it turns into a saucy consistency.

Now arrange it on a platter & pour the sauce on chicken & beef.
