Pad Priew-Waan Gai - Sweet And Sour Chicken

Thailand is a melting point for all Asian dishes. This dish has a very distinct Chinese influence, especially the sweet and sour taste. Here the chicken is stir fried and simmered with colorful veggies, flavored with tomato, sharpened with rice vinegar and sweetened with sugar, forming a rich taste.
Ingredients
  Skinless chicken breasts 225 Gram, sliced
  Small onion 1⁄4
  Green pepper 1⁄4 , sliced
  Cucumber 1 , finely sliced
  Cherry tomatoes 4
  Spring onions 4
  Tomato puree 1 Teaspoon
  Rice vinegar 1 Tablespoon
  Fish sauce 1 Tablespoon
  Sugar 1 Teaspoon
  Chicken stock 4 Tablespoon
  Sunflower oil 4 Tablespoon
  Ground black pepper To Taste
  Coriander leaves 1 Tablespoon (For Garnish)
Directions

MAKING
1. Heat a wok, add the oil and when hot, stir fry the chicken pieces for 5 to 7 minutes or until they change the color and are tender.
2. Pour in stock. Add onion, pepper, cucumber, tomatoes, spring onions, tomato puree, vinegar, fish sauce, sugar. Stir and cook for 5 minutes.
3. Season to taste.

SERVING
4. Garnish with coriander leaves and serve hot with steamed rice.

TIPS
If you add some more vegetables of your choice like beans, pea aubergines,etc - you can serve this as a salad. But if you are going serve it as a salad, reduce the gravy.

Story
To be honest, I made this dish a tad too sweet. So watch out the amount of sugar that you add in this dish, unless you like it that way. I will be trying this out some other time to perfect it anyway.
