Sweet And Sour Chicken

Ingredients
  Chicken breast 8 Ounce, boned
  Salt 1⁄2 Teaspoon
  Cornstarch 1⁄2 Teaspoon
  Corn oil 3 Tablespoon
  Green pepper To Taste
  Onion 1
  Ginger root 1 Ounce
  Garlic 1 Clove (5 gm)
  Sweet and sour sauce 1 Tablespoon
  Soy sauce 1 Tablespoon
  Red wine vinegar 1 Tablespoon
  Brown sugar 1 Tablespoon
  Tomato puree 1 Tablespoon
  Chicken stock 1 Cup (16 tbs)
Directions

GETTING READY
1. Cut the chicken into very thin slices
2. Wash pepper, discard stem, seeds and ribs, and cut pepper into thin slices
3. Peel and chop the onion; also slice the bamboo shoots

MAKING
4. In a platter, mix together the salt and cornstarch and rub ths mixture onto the sliced chicken
5. In a large wok, heat the oil and spread a single layer of the chicken slices in it, stir frying for four minutes
6. Remove the chicken from the pan, drain on paper towels and set aside in a warm place
7. In a small bowl, add all the sauce ingredients and add them to the wok over heat
8. Add bamboo shoots, green pepper, onion, garlic and ginger root and stir fry over medium flame for a minutes
9. Add the chicken to the pan, pour in the sauce and mix well until each piece of chicken is well coated; cook for a minute

SERVING
10. Serve at once
