Melt butter in a saucepan, add onion, cook till soft and brown, stirring often.
Blend in flour, salt and pepper.
Slowly add and stir in milk or stock, continue to cook and stir till thick.
Mix in chicken or turkey.
Turn into a bowl and chill well.
(It's best to make night before.) Shape mixture into croquettes.
Combine eggs and water, put crumbs in dish.
Dip first in egg mixture, then in bread crumbs.
Deep fry at 375Â°F for 5 minutes, till golden brown.
