Chicken Croquette

Ingredients
  Butter 2 Tablespoon
  Minced onion 2 Tablespoon
  Onion 2 Tablespoon, minced
  Flour 6 Tablespoon
  Salt 1⁄2 Teaspoon
  Green pepper To Taste
  Stock 1 1⁄2 Cup (24 tbs)
  Cooked chicken 3 Cup (48 tbs), finely chopped
  Finely chopped cooked chicken/Finely chopped cooked turkey 3 Cup (48 tbs)
  Egg 1 , slightly beaten
  Egg 1 , beaten
  Water 2 Tablespoon
  Dry bread crumbs 1 Cup (16 tbs)
Directions

Melt butter in a saucepan, add onion, cook till soft and brown, stirring often.
Blend in flour, salt and pepper.
Slowly add and stir in milk or stock, continue to cook and stir till thick.
Mix in chicken or turkey.
Turn into a bowl and chill well.
(It's best to make night before.) Shape mixture into croquettes.
Combine eggs and water, put crumbs in dish.
Dip first in egg mixture, then in bread crumbs.
Deep fry at 375°F for 5 minutes, till golden brown.
