Spicy Honey Chicken

spicy hot yet sweet chiken grilled and topped with a tomato olivada.
Ingredients
  Honey 2 Tablespoon
  Tomato 1 Medium, diced
  Green pepper 1⁄2 Small, chopped (cored seeded)
  Red onion 1⁄2 Small, chopped
  Kalamata olives 12 , coarsely chopped (pitted)
  Sherry wine vinegar 1 Tablespoon
  Olive oil 1 Tablespoon
  Salt 1⁄8 Teaspoon
  Jalapeno chili 1 , finely chopped (stemmed seeded)
  Salt 1⁄4 Teaspoon
  Chicken breast halves 4
  Prepared polenta 1 Pound, sliced 1/2-inch thick
Directions

1. Tomato Olivada: In a medium sized bowl, stir honey, tomato, green pepper, onion, olives, vinegar, olive oil and salt. Set aside until time to serve.
2. Chicken: In a bowl, mix jalapeno, honey and salt. Rub the mixture over chicken, cover and refrigerate for 1 hour. Heat gas grill to medium-high and grill chicken about 11-12 minutes until internel temperature reaches 160 degrees. Grill the polenta about 4 minutes on each side until golden brown. Top the chicken breast halves with the tomato olivada. Serve with polenta.
