Microwave Pantry Chicken
|Frozen corn kernels||10 Ounce, thawed (1 Package)|
|Prepared salsa||1⁄2 Cup (8 tbs) (Mild Or Hot, Green Or Red)|
|Skinless boneless chicken||12 Ounce, cut into 1/2-inch dice (Thigh Or Breast)|
|Freshly ground black pepper||To Taste|
1. Combine the corn, salsa, and chicken in a mixing bowl. Season to taste with salt and pepper.
2. Transfer this mixture to a microwaveable dish, cover (turned back at one corner) with plastic wrap, and microwave at 100% power for 3 to 4 minutes. Give the mix a stir, cover again, and microwave for another 2 minutes. Let the dish stand for 5 minutes to complete the cooking before serving.
3. Serve in deep bowls, garnished with sour cream if you wish.
