Linguine with Lychees, Chicken and Cashews
|Chicken||8 Ounce, cooked, diced (Preferably Smoked / Roasted)|
|Lychees||4 Ounce, drained and chopped (1 Can)|
|35% whipping cream||1 Cup (16 tbs)|
|Prepared tomato sauce||1 Cup (16 tbs)|
|Chopped cashews||1⁄3 Cup (5.33 tbs)|
|Chopped green onions||1⁄3 Cup (5.33 tbs)|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
1. In a large pot of boiling salted water, cook linguine 8 to 10 minutes until al dente.
2. To prepare the sauce, in a large skillet, melt butter over medium-high heat and cook chicken and lychees until chicken starts to brown, about 4 minutes.
3. Stir in cream and tomato sauce and cook 5 minutes.
4. Toss drained pasta with sauce, cashews and green onions and serve.
