Who Do Voodoo Sauce

Ingredients
  Sesame oil 1 Tablespoon, toasted
  Red bell pepper 2 , seeded and chopped
  Onion 1 , peeled, chopped
  Garlic 2 Clove (10 gm), minced
  Ancho chili 2 , seeded, chopped
  Serrano chili 2 , chopped
  Habanero pepper 1 , seeded and chopped
  Tomato 1 , chopped
  Papaya 1 , peeled, seeded and chopped
  Firmly packed brown sugar 1 Tablespoon
  Ginger 1 Tablespoon, grated
  Hot pepper sauce 3 Tablespoon
  Rice wine vinegar 1⁄2 Cup (8 tbs)
  Chicken broth 1⁄2 Cup (8 tbs)
  Orange juice 1⁄2 Cup (8 tbs)
  Fish sauce 1 Teaspoon
  Soy sauce 1 Teaspoon
  Salt To Taste
  Lime juice To Taste
Directions

MAKING
1) In a large saucepan placed over moderate heat, heat the oil.
2) Add the onions, garlic, red pepper and all the chilies.
3) Saute the ingredients for about 3 to 4 minutes, till the onions have become transparent
4) Add the papaya, tomatoes, brown sugar, ginger, hot pepper sauce, chicken broth, vinegar and orange juice. Bring the mixture to a boil.
5) Reduce the hat and gently simmer for about 30 minutes.
6) Into a blender, pour the mixture and process till it has smoothened.
7) Strain the sauce.
8) Add the soy sauce and fish sauce. Use lime juice and salt to season.

SERVING
9) Serve or use as preferred.
