Baked Chicken With Pineapple And Almonds

Whip up this delicious Chicken with Pineapple and Almonds that will have everyone reaching the bowl for seconds. This easy and simple recipe is something new to try for those special occasions and tastes fabulous to impress your guests!
Ingredients
  Canned pineapple cubes 1⁄2 Cup (8 tbs)
  Butter/Margarine 2 Tablespoon
  Cornstarch 1 1⁄2 Tablespoon
  Salt 1 Teaspoon
  Cayenne 1 Dash
  Cinnamon powder 1 Dash
  Ground cloves 1 Dash
  Pineapple juice 1⁄2 Cup (8 tbs)
  Cooked chicken 2 Cup (32 tbs)
  Celery 1⁄2 Cup (8 tbs)
  Whole blanched almonds 1⁄2 Cup (8 tbs)
  Chutney 2 Tablespoon
Directions

GETTING READY
1) Preheat the oven to 350F

MAKING
2) In a frying pan, melt the butter and then sauté the pineapple for 5 minutes
3) Add in the cornstarch and the cayenne, ground clove, and cinnamon and mix well
4) Add the pineapple juice, chutney and the stock to the cornstarch
5) Add this mixture to the pineapple to the cubes and over a low flame cook till it thickens
6) Take a 1 ½ quart greased casserole and place the chicken, celery and the ¼ almonds
7) Pour the pineapple sauce over and mix well
8) Sprinkle in the remaining almonds
9) Bake in the oven for 25 minutes at 350F

SERVING
10) Serve the casserole warm
