Baked Rock Cornish Game Hen

Ingredients
  Cornish hen 2 Pound
  Onion 1⁄4 Cup (4 tbs)
  Mushrooms 2 Tablespoon
  Ham 1⁄2 Cup (8 tbs)
  Butter 1 Cup (16 tbs)
  Bread crumbs 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Poultry seasoning 1⁄2 Teaspoon
  Egg 1
  Parsley 1 Teaspoon
  Bacon slices 4
  White wine 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1)Chop livers.

MAKING
2)In a pan, add ½ cup butter and sauté livers, onion, mushrooms and ham. Put them into large bowl and cool.
3)Fold in crumbs, seasonings, egg and parsley and mix well.
4)Fill the mixture into the hens, securing neck and body openings. Tie wings.
5)Crisscross bacon strips on breasts of hens.
6)Put them on baking rack.
7)Bake at 400 degrees for 1 hour, basting frequently with remaining butter and wine.

SERVING
8)Serve on bed of seasoned wild rice.
