Chicken Livers And Mushrooms
|Chicken livers||1⁄2 Pound|
|Mushrooms||1⁄2 Pound, thinly sliced|
|Onion||1⁄4 Cup (4 tbs), grated|
|Parsley||2 Tablespoon, chopped|
|Burgundy||1⁄2 Cup (8 tbs)|
|Butter||1⁄4 Cup (4 tbs)|
1 Dice livers coarsely.
2 In a large plastic bag, combine with mushrooms, onion, parsley, salt, pepper, and wine.
3 Marinate in the refrigerator overnight.
4 In a 2-quart glass casserole, heat butter for 30 to 45 seconds.
5 Add chicken-liver mixture.
6 Cook, uncovered,for 6 to 8 minutes, stirring every 2 minutes.
7 Cover the casserole and cook for 3 to 4 minutes more.
8 Spoon onto toasted bread or muffins arranged on serving platter.
