Cashew Chicken

Ingredients
  Chicken breasts 12 Ounce, boned and skinned
  Egg white 1
  Dry sherry 4 Tablespoon
  Corn flour 2 Teaspoon
  Oil 3 Tablespoon
  Spring onions 4
  Garlic 2 Clove (10 gm)
  Root ginger 1 , peeled, finely chopped
  Light soy sauce 1 Tablespoon (1 Bag)
  Cashew nuts 4 Ounce
Directions

GETTING READY
1) Make 1 cm (1/2 inch) cubes from the chicken.
2) In a bowl, add egg white, half of the sherry and the corn flour. Mix thoroughly.
3) Place the chicken cubes into the bowl and toss to coat evenly.

MAKING
4) In a wok, add oil to heat up.
5) Add spring onions, garlic and ginger to stir-fry for 30 seconds.
6) Fold in the chicken cubes and continue stir-frying for 2 minutes.
7) Pour in the remaining sherry and the soy sauce and stir well.
8) Add the cashew nuts and cook for another 30 seconds.

SERVING
9) In a warmed serving dish, serve the preparation at once.
