Rummed Up Chicken

Ingredients
  Lime juice 1⁄4 Cup (4 tbs)
  Dark rum 1⁄4 Cup (4 tbs)
  Salad oil 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Tabasco sauce 1 Dash
  Broiler-fryer chicken 3 Pound, cleaned, cut into serving pieces (1 Piece)
  Seedless raisins 1⁄3 Cup (5.33 tbs)
  Pineapple cubes 1 Cup (16 tbs)
  Hot cooked rice/Saffron rice 1⁄2 Cup (8 tbs)
Directions

MAKING
1. In a bowl, mix together lime juice, rum, oil, salt, pepper and Tabasco and add the chicken to marinade; let it set for an hour
2. Remove the chicken and add it to hot oil in a skillet to fry till brown; turn the heat down, cover and cook for ten miutes
3. Add pineapple cubes and raisins, cover and simmer until chicken is tender

SERVING
4. Goes well with plan or saffron rice
