Peach Stuffed Chicken Breasts

Ingredients
  Chicken breasts 6
  Salt 1 Teaspoon
  Fresh peaches 3
  Finely chopped onion 1⁄2 Cup (8 tbs)
  Chopped cashews 1⁄2 Cup (8 tbs)
  Powdered ginger 1⁄2 Teaspoon
  Butter 1⁄4 Cup (4 tbs)
  Peach sauce 1 Tablespoon
Directions

MAKING
1. Bone and skin chicken pieces and halve along the length
2. Pound them to flatten and sprinkle salt on top
3. Peel and cut the peaches into small pieces and mix with onion, cashew and ginger
4. Place the filling on each piece of chicken, roll it up and secure with a toothpick
5. Line a tin with foil and melt butter in it; place the chicken breasts and bake at 350°F for twenty five minutes; turn around and bake for another twenty minutes

SERVING
6. Serve with sauce
