Grilled Chicken Sandwich With Red Pepper Mayonnaise

Ingredients
For lemon marinade
  Chopped fresh rosemary 1 Tablespoon
  Chopped fresh thyme 1 Teaspoon
  Red pepper flakes 1 Tablespoon
  Bay leaves 3 , crushed
  Garlic 4 Clove (20 gm), chopped
  Orange zest strip 5 , diced
  Lemon zest strip 5 , diced
  Fresh lemon juice 2 Tablespoon
  Extra virgin olive oil 1 Cup (16 tbs)
  Chicken breasts 6 Large, boned, skinned, and excess fat removed
For red pepper mayonnaise
  Sweet bell pepper 1⁄2 (Yellow Variety)
  Hot cherry peppers/1 tablespoon red pepper flakes 3 (Red Variety)
  Garlic clove 3 Large, peeled
  Commercial mayonnaise 1 Cup (16 tbs)
For sandwich
  Frisee head 1 Small, washed and dried
  Red cherry tomato 6 , stems removed, then cut in half
  Marinated artichoke hearts 12 , sliced lengthwise
  Salt To Taste
  Freshly ground black pepper To Taste
  Chopped fresh flat leaf parsley To Taste
  Sourdough sandwich rolls/2 sourdough baguettes 6 , divided into thirds
Directions

MAKING
1) Prepare marinade in a small bowl, add all the ingredients and mix well.
2) Keep it aside.
3) Put chicken breasts between 2 pieces of waxed paper. Faltten lightly using a meat mallet.
4) In a portable container with a leakproof lid put the chicken.
5) Pour marinade over the chicken and turn to coat. Cover and refrigerate for 2 hours or overnight.
6) Place in cooler to be carried to the picnic.
7) Prepare red pepper mayonnaise burning bell pepper and cherry peppers over open gas flame or charcoal grill or in the broiler till blistered.
8) Keep aside to cool.
9) When cooled, peel the blackened skin, seed and derib.
20) Using food processor or blender, mix bell pepper, cherry peppers and garlic. Pulse till pureed.
21) Add the red pepper puree into the mayonnaise.
22) Transfer into portable container with lid. Refrigerate till ready to pack in the cooler.
23) Put frisee in a plastic bag and chill
24) In a small portable bowl with a lid, add cherry tomatoes and artichokes and mix well.
25) Sprinkle salt, pepper and parsley over it and toss well.
26) Put the greens and vegetables in the cooler.

SERVING
27) Serve cold.
