Californian Calico Chicken Skillet

Ingredients
  Broiler fryer chicken 2 1⁄2 Pound (1 Piece)
  Vegetable oil 3 Tablespoon
  Onion 1 Large, chopped to 1 cup
  Garlic 1 Clove (5 gm), minced
  Regular rice 1 Cup (16 tbs) (Uncooked)
  Water 2 1⁄4 Cup (36 tbs)
  Frozen mixed vegetables 10 Ounce (1 Package)
  Instant chicken broth 2 Tablespoon (2 Envelopes)
  Salt 1 1⁄2 Teaspoon
  Tarragon leaf 1 1⁄2 Teaspoon, crumbled
Directions

MAKING
1. Cut the chicken into serving sized pieces and brown evenly in a large skillet in oil; trasnfer into a pan and reserve
2. In the same skillet, saute onions and garlic until soft, add in rice and brown it for three minutes
3. Add water, frozen vegetables, instant chicken broth, salt and tarragon; add chicen and heat till boiling point; turn the heat down and cover
4. Allow to simmer for half an hour till the chicken is tender adn liquid absorbed

SERVING
5. Serve as appropriate
