Terrific Tarragon Chicken Casserole

Ingredients
  Broiler fryer chicken 3 Pound, cleaned, cut into 8 pieces (1 Bird)
  Salt 1 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Olive oil/Salad oil 2 Tablespoon
  Canned whole tomatoes 28 Ounce (1 Can, 1 Pound 12 Ounces)
  Mushrooms 2 1⁄2 Cup (40 tbs), sliced
  Cooked ham 1⁄2 Cup (8 tbs), diced
  Dry white wine 1⁄2 Cup (8 tbs)
  Sweet pepper flakes 1⁄4 Cup (4 tbs)
  Instant minced onion 2 Teaspoon
  Tarragon leaves 1 1⁄4 Teaspoon, crumbled
Directions

MAKING
1. Sprinkle salt and pepper over the chicken and brown in hot oil in a skillet for ten minutes
2. Pour the excess oil off and set aside the chicken in the skillet
3. Drain the tomatoes, reserve a quarter cup of the liqid nad mash them
4. Add tomatoes, its liquid, mushrooms, ham, wine, pepper flakes, minced onion and tarragon to a skillet and allow to come to a boil
5. Turn the heat down, cover and allow to simmer for half an hour till chicken is tender

SERVING
6. Drizzle sauce over the chicken and serve
