Grilled Chicken Skewers with Peanut Sauce

Ingredients
For chicken
  Boneless, skinless, chicken breasts 1 Pound, cut into 1 inch pieces
  Teriyaki marinade sauce 1⁄4 Cup (4 tbs) (From A 15-Ounce Bottle)
For rice
  Instant brown rice 1 Cup (16 tbs), uncooked
  Water 1 1⁄4 Cup (20 tbs)
For sauce
  Creamy peanut butter 1⁄4 Cup (4 tbs)
  Chopped fresh cilantro 1 Tablespoon
  Teriyaki marinade sauce 3 Tablespoon (From 15 Ounce Bottle)
  Lime juice 1 Tablespoon
  Red pepper sauce 1⁄4 Teaspoon
  Green onions 4 Medium, chopped to make 1/4 cup
  Garlic 2 Clove (10 gm), finely chopped
Directions

GETTING READY
1 Soak bamboo skewers in water for atleast 30 minutes before using to prevent burning.
2 In a medium sized bowl mix chicken and 1/4 cup teriyaki marinade.Cover and refrigerate for 30 - 60 minutes.
3 Heat the coal or gas grill.
4 In a small bowl mix all sauce ingredients until blended.Set aside.

MAKING
5 Remove the chicken from the marinade and thread the chicken on skewers.Discard the marinade.
6 Place the skewers on grill,cover and cook over medium heat for 8 to 10 minutes turning once.
7 Meanwhile,cook rice in water as directed on package without butter and salt. Sprinkle chicken with additional chopped fresh cilantro if desired.

SERVING
8 Serve with sauce and rice.
