Vinegar Chicken, French Style

Ingredients
  Broiler fryer chickens 6 Pound, quartered (2 Whole, 3 Pounds Each)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Canned chicken broth 10 3⁄4 Ounce (1 Can)
  Dry red wine 2⁄3 Cup (10.67 tbs)
  Tomato puree 1⁄2 Cup (8 tbs)
  Red wine vinegar 1⁄3 Cup (5.33 tbs)
  Minced scallions 1 Tablespoon
  Garlic 1 Clove (5 gm), mashed
  Dried tarragon 1 Teaspoon
  Sugar 1 Teaspoon
  Bay leaf 1⁄2
Directions

MAKING
1. in a twelve inch skillet, melt butter and brown the chicken; remove the pieces to the roasting pan when brown
2. Season it with salt and pepper
3. Drain away the fat from the skillet, ad all the other ingredienst and heat till it comes to a boil
4. Pour this mixture over the chicken in the roasting pan and bake without a lid at 350° F until tender for half an hour or so
5. Transfer chicken to a heated platter and keep warm
6. Add the pan juices to a measuring cup, skim the fat off and add to a medium saucepan; heat till it boils and allow to reduce to one and a quarter cup

SERVING
7. Pour this sauce over the chicken and serve
