Grilled Lemon Chicken
|Lemon juice||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted (1 Stick)|
|Thyme leaf/1 tablespoon minced fresh thyme||1 Teaspoon, crumbled|
|Liquid red pepper seasoning||1⁄4 Teaspoon|
|Broiler fryer chicken||5 Pound, quartered (2 Whole, 2 1/2 Pounds Each)|
|Freshly ground pepper||To Taste|
1 In a small bowl,combine lemon juice, butter or margarine, thyme and pepper seasoning.
2 Sprinkle the chickens with salt and pepper. Place the chickens, bone side down, on the grill over hot coals and brush with the basting sauce.
3 Grill for 40 minutes, turning over once. Baste frequently with the sauce.
4 Serve with the remaining basting sauce poured over the chickens.
