Stuffed Chicken

Ingredients
  Onion 1 Small
  Ginger root 1 Medium
  Pepper 1 Tablespoon
  Salt 1 Teaspoon
  Yogurt/Sour cream 1 Cup (16 tbs)
  Chicken 4 Pound
  Boiled potatoes 4 Small
  Hard cooked egg 2
  Lemon juice 1 Tablespoon
  Blanched almonds 2 Tablespoon, chopped
  Seedless raisins 3⁄4 Cup (12 tbs)
  Butter 3⁄4 Cup (12 tbs)
Directions

MAKING
1) With a sharp knife, chop onion and gingerroot together.
2) Mix pepper, salt and yogurt together.
3) Baste the mixture over chicken. Pierce chicken with fork.
4) Keep aside for 1 hour.
5) Put diced potatoes and eggs in a bowl.
6) Drizzle lemon juice on top.
7) Add almonds and raisins and mix.
8) Place in the cavity of chicken and truss the chicken.
9) In a Dutch oven melt butter and put chicken on it.
10) Cook covered in low heat for 2 hours till chicken is done.

SERVING
11) Serve hot.
