Jerk Chicken

Ingredients
  Chopped onion 1⁄2 Cup (8 tbs)
  Brown sugar 1 Tablespoon
  Low salt soy sauce 2 Tablespoon
  Red wine vinegar 2 Tablespoon
  Chopped fresh thyme 1 Teaspoon
  Chopped garlic 1 Teaspoon
  Dark sesame oil 1⁄2 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Scotch bonnet pepper/Habanero chile pepper 1 , halved and seeded
  Skinned boned chicken breast halves 8 Ounce (2 Breast Halves, 4 Ounce Each)
  Cooking spray 1
Directions

MAKING
1. In a food processor or blender, add onions, soy sauce, thyme, chile pepper, sesame oil, garlic, sugar, vinegar and allspice and pulse it about twelve times
2. Add half of it in a ziplock pouch and set aside the remaining as ti can be serve with grilled chicken
3. Add chicken to the ziplock bag, seal ti and marinate in the refrigerator for an hour, turning it around now nad then
4. Coat a grill rack with cooking spray; remove the chicken from the bag, discard the marinade and plae it on the grill
5. Cover and allow to grill for four minutes or so on each side

SERVING
6. Serve with reserved onion mixture and garnish with thyme sprigs
