Chicken And Almonds

Ingredients
  Chicken broth 3 Tablespoon
  Baking powder 1⁄3 Teaspoon
  Egg white 1
  Cornstarch 2 Teaspoon
  Sherry 4 Teaspoon
  Diced chicken breast 1 Cup (16 tbs), boned
  Shortening 1 Tablespoon
  Sliced fresh mushrooms 1⁄2 Cup (8 tbs)
  Sliced ginger 1 Tablespoon
  Diced green onion 1 Tablespoon
  Diced green pepper 1 Tablespoon
  Diced bamboo shoots 2 Tablespoon
  Diced celery 1⁄2 Cup (8 tbs)
  Soy sauce 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Chopped almonds 1⁄2 Cup (8 tbs)
Directions

MAKING
1) In a bowl, combine 2 tablespoons chicken broth, baking powder, egg white, 1 teaspoon cornstarch and 1 tablespoon sherry
2) To this marinade, add the chicken and leave aside for 15 minutes
3) In a skillet, melt the shortening and add the chicken mixture, cooking it for about 3 minutes
4) To the chicken mixture, add mushrooms, ginger, onion, green pepper, bamboo shoots and celery and cook further for another 1 to 2 minutes
5) In a bowl, combine the remaining chicken broth, cornstarch and sherry and add soy sauce, chopped almonds, egg white, salt and sugar
6) Add this to the chicken mixture and cook until it’s evenly heated.

SERVING
7) Serve on a bed of fried rice or noodles
