Liver & Rice Stuffed Roast Chicken
|Cooked rice||1 Cup (16 tbs)|
|Chicken liver||1 , chopped|
|Butter/Olive oil||2 Tablespoon|
|Raisins||1⁄4 Cup (4 tbs)|
|Pine nuts||1⁄2 Cup (8 tbs)|
|Lemon||2 , juiced|
Wash and dry chicken.
Combine remaining ingredients except lemon juice.
Stuff chicken with mixture and sew up vent.
Rub with lemon juice and roast, uncovered, in preheated slow oven (300°F.) for 2 hours, basting every 30 minutes with lemon and pan juices.
