Glazed Roast Chicken

Ingredients
  Roasting chicken 4 Pound
  Salt To Taste
  Monosodium glutamate 1 Tablespoon
  Onion 1 , peeled
  Carrot 1
  Celery stalks 2
  Cornstarch 1 Tablespoon
  Orange juice 1 Cup (16 tbs)
  Pimiento 1 Tablespoon
  Watercress 1
Directions

GETTING READY
1) Clean and wash chicken. Rub neck and body cavities with salt and monosodium glutamate.
2) Stuff cavity with onion, carrot, and celery. Seal the opening and tie bird.
3) Preheat slow oven (325°F.).

MAKING
4) Place the chicken in casserole or on rack in shallow roasting pan.
5) Place in preheated oven and roast for 3 hours.
6) In a small bowl, mix cornstarch with orange juice.
7) Place in flame, stir till smooth and thick.
8) While the chicken is roasting, about 30 minutes before chicken is done, baste the mixture.
9) Repeat brushing again after 15 minutes.
10) Place in a casserole or a hot platter.

SERVING
11) Garnish with pimiento, watercress, parsley, and green onion on top.
