Chicken With Aubergines

Ingredients
  Oil 90 Milliliter (6 Tablespoon)
  Chicken 2 3⁄4 Pound, cut into 8 pieces (1 In Number, 2 Kilogram)
  Aubergines 2 , washed and sliced
  Onion 1 , peeled and sliced
  Garlic 2 Clove (10 gm), peeled and crushed
  Mint leaves 6 , finely chopped
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Take a browning dish and preheat for 6 minutes on power.

MAKING
2) Add oil and roast the chicken on all sides and keep aside.
3) Reheat the browning
dish again for 4 minutes on power, pour in oil and stir fry aubergines.
4) Repeat the steps and add more oil if needed.
5) Drain the aubergines in kitchen towel.
6) Stir in onion, chicken, garlic, and drizzle oil and layer the aubergines.
7) Sprinkle salt and pepper to taste.
8) Cover and cook for 10 minutes on power.

SERVING
9) Serve hot with finely chopped mint leaves.
