Sailor's Raisin Chicken Scramble
|Frying chicken pieces||8|
|Onion||1 Medium, chopped|
|Rice||1 Cup (16 tbs)|
|Dark seedless raisins||2⁄3 Cup (10.67 tbs)|
|Garlic salt||1 Teaspoon|
|Canned stewed tomatoes||1 Pound (1 Can)|
|Chicken stock base||2 Tablespoon|
|Water||1 1⁄2 Cup (24 tbs)|
1) In a heavy skillet, cook the chicken in hot shortening over low flame till it is browned and then push the pieces to one side.
2) Add onions to the skillet and cook till they are softened.
3) Add all remaining ingredients, stirring to the concoction with the chicken and cover the skillet tightly.
4) Cook on low flame for about 45 minutes or till the liquid has been absorbed and the chicken is tendered.
5) Serve hot.
