Breast Of Chicken Flambe

Ingredients
  Chicken breasts 4 (Fresh Or Frozen)
  Butter 1⁄4 Cup (4 tbs)
  Cooked ham slice 4
  Garlic salt 1⁄4 Teaspoon
  White pepper 1 Teaspoon
  Oil 6 Tablespoon
  Canned fruit cocktail 8 Ounce, drained
  Brandy 1⁄2 Cup (8 tbs)
Directions

Thaw the chicken breasts if frozen.
Place the chicken between 2 sheets of damp wax paper and pound the meat flat.
Divide the butter and ham into 4 equal portions and season with the garlic salt and pepper.
Place a portion on each chicken slice.
Roll up and fasten the chicken breasts with fine string, thread or wooden toothpicks.
Heat the oil in a shallow flameproof casserole, fry the chicken breasts for 3 minutes all over and then lower the heat and continue cooking for a further 10 minutes, turning from time to time.
Add the fruit cocktail, pour over the brandy, set alight very carefully with a match and serve while still flaming.
Serve with buttered rice.
