Chicken With Wild Mushrooms

Ingredients
  Skinless boneless chicken breasts 32 Ounce (4 Pieces, 8 Ounce Each)
  Butter 2 Tablespoon
  Wild mushrooms 8 Ounce, mixed
  Shallot 1 , finely chopped
  Garlic 1 Clove (5 gm), finely chopped
  Madeira 2 Tablespoon
  Herbes de provence 2 Tablespoon
  Chicken stock 2 Cup (32 tbs)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1)Preheat oven to 400 degrees F.
2)Take a baking pan with a wire rack and grease it.
3)Using a mallet, flatten chicken and add salt and pepper on both the sides.

MAKING
4)In a hot pan, add butter and brown. Now add in shallot, mushrooms, garlic, salt and pepper.
5)Continue to cook for 2 minutes. Deglaze using Madiera.
6)Add in herbes de Provence and cook for 2 minutes.
7)Cool, and fill chicken breasts with the butter mixture.
8)Take a plastic wrap and lay filled chicken breast on it. Roll wrap tightly around chicken to resemble a sausage.
9)Over wrap with aluminium foil. Place in baking pan and bake for 15 to 20 minutes.
10)Boil chicken stock and reduce volume to half.
11)After baking, add in chicken juices to reduced stock. Season according to taste.
12)Spread whisked butter over chicken.

SERVING
13)Serve hot.
