|Broiler fryer chicken pieces||8 (Or Parts)|
|Margarine||2 Tablespoon, melted|
|Taco seasoning mix||1 1⁄4 Ounce (1 Package)|
|Tomato juice||1 1⁄2 Cup (24 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Pinto beans||1 Can (10 oz) (Or Vegetarian Beans)|
|Rice||3⁄4 Cup (12 tbs)|
Place chicken skin side down in 13x9x2 pan.
Pour butter and 1/2 taco seasoning over chicken.
Bake uncovered at 400° for 15 minutes.
Remove chicken from baking pan.
In baking pan mix tomato juice, water, beans and rice.
Return chicken skin side up.
Pour remaining 1/2 of taco seasoning.
Bake uncovered for 45 minutes at 400° or until liquid is absorbed.
