Oven Fried Chicken
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Flour||1 Cup (16 tbs)|
|Yellow cornmeal||1 Cup (16 tbs)|
|Broiler fryer chicken||1 , cut into pieces|
|Evaporated milk||1 Cup (16 tbs)|
1. Preheat oven to 375°F.
2. Place a 7 x 11 x 2-inch baking pan in the oven and melt butter.
3. Take a shallow dish and prepare a mixture of corn meal, flour and salt.
4. Roll chicken pieces in the flour mixture after dipping in evaporated milk.
5. Arrange the chicken in the pan with skin portion facing down and bake for 1 hour, turning halfway through, or till chicken turns tender.
6. Serve hot.
