How To Cook Chicken Gulay (Pinoy Style)

The Gulay is a traditional rice and chicken dish with tomato sauce, red peppers, carrots and onions. It reminded me of Chicken stir-fry except with a stronger sweet, sour and pepper flavor all rolled into one. It was quick to make, easy to store and tasted great the next day for lunch. The kids will love this dish and its very easy to prepare so enjoy!!
Ingredients
  Chicken breast 2 Pound
  Russet potatoes 2 Large
  Carrots 2 Large
  Onion 1
  Red pepper 1
  Water 1⁄2 Cup (8 tbs)
  Garlic 4 Clove (20 gm)
  Tomato sauce 1 Can (10 oz)
Directions

Chop veggies into small pieces. Cut chicken breast across the grain of the meat to allow chicken to be tender for cooking. Heat skillet to medium heat add tomato sauce first stir until sauce thickens. Add water, add chicken first until chicken turn light brown, then and veggies stir occasionally until veggies are tender. Add seasoning for taste.
