Chicken And Watermelon

Ingredients
  Chicken breasts 2 , cut into bite-sized pieces
  Olive oil 2 Tablespoon
  Onion 1⁄4 , finely chopped
  Garlic 1 Clove (5 gm), finely chopped
  Curry powder 1 Teaspoon
  Carrot 1 , slivered or grated
  Pepper 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Watermelon 1 Cup (16 tbs), seeded peeled and diced
  Cinnamon 1⁄2 Teaspoon
  Ginger slice 3 , chopped
Directions

FINALIZING
1. In a medium skillet or wok, heat oil over medium high flame
2. When the oil is hot, add the chicken and sauté until it is evenly browned on all sides.
3. Add the onion, garlic and ginger. Stir fry for 1 minute till the onion is soft and transparent.
4. Stir in the carrots and watermelon.
5. Sprinkle the cinnamon and curry powder and toss.
6. Add the seasonings and toss to mix.
7. Dish out and serve immediately

SERVING
8. Serve on a bed of fresh crisp lettuce and salad greens.
