Chicken Macadamia

Ingredients
  Peanut oil 1 Tablespoon
  Eggs 2 , beaten
  Flour 1⁄2 Cup (8 tbs)
  Cornstarch 1⁄4 Cup (4 tbs)
  Cold water 1⁄2 Cup (8 tbs)
  Ginger root piece 1 Inch, minced
  Onion 1 , grated
  Pepper 1⁄4 Teaspoon
  Brandy 2 Tablespoon
  Soy sauce 2 Tablespoon
  Chicken breasts 3 , boned
  Slivered toasted macadamia nuts 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1.Slice the chicken breasts into quarters.

MAKING
2.Take a container and put 2 tablespoon of peanut oil in it along with eggs, flour, cornstarch, cold water, gingerroot, onion, pepper, brandy and soy sauce.
3.Blend all the ingredients well.
4.Dip the chciken breasts in the blended mixture and leave them for 20 minutes.
5.Take a skillet and heat peanut oil in it.
6.Fry the chciken breasts until brown.

SERVING
7.Garnish with macadamia nuts and toss over rice to serve.
