Baked Chicken Kabob & Vegan Kabobs
|Chicken breast cubes||2 Pound|
|Red bell pepper||1 Large, cubed (Huge Sized Or 3 Small)|
|Red onions||4 , cubed|
|Whole mushrooms||1 Pound (1 Box)|
|Yellow peppers/Orange peppers||12|
|Garlic||2 Clove (10 gm), crushed|
|Allspice blend||1 Tablespoon|
|Dry oregano||1 Tablespoon|
|White vinegar||4 Teaspoon|
|Olive oil||1⁄4 Cup (4 tbs)|
pour vinegar and olive oil with all the dry ingredients over the meat and rub well.
take 3 pieces of spiced chicken along with two red bell peppers (one at the head and one at the tip), one cubed red onion, 1 mushroom, 1 orange or yellow pepper and skewer on each skewer.
place on foil tray and bake at 350 F for 30 minutes. can be served over a bed of couscous or rice or simply as is.
