Quick Chicken Pilaf
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Olive oil||2 Teaspoon|
|Basic chicken mix||2 Ounce, Defrosted (1 Package)|
|Instant rice/Quick cooking rice||2 Cup (32 tbs)|
|Hot water||1 Cup (16 tbs)|
|Instant chicken bouillon granules||1 Teaspoon|
|Seedless raisins||1⁄3 Cup (5.33 tbs)|
|Cashews||1⁄2 Cup (8 tbs)|
In 2-qt casserole combine celery, green pepper and olive oil.
Microwave at High 1 1/2 to 2 1/2 minutes or until tender.
Stir in remaining ingredients except raisins and nuts.
Microwave at High 7 to 10 minutes or until rice is tender and liquid is absorbed.
Stir in raisins, if desired.
Sprinkle with cashews.
Let stand covered 2 to 3 minutes.
