Chicken And Dry Red Peppers

  Boneless chicken 4 Ounce (125 Gram)
For marinade
  Cornflour 1 Teaspoon
  Soy sauce 1 Teaspoon
  Chilies 3 , dried
  Peanuts 1 Ounce (30 Grams)
  Ginger slice 2
For seasoning sauce
  Soy sauce 2 Teaspoon
  Sherry 1 Teaspoon
  Vinegar 1⁄2 Teaspoon
  Sugar 1 Teaspoon
  Sesame oil 1⁄4 Teaspoon
  Salt 1 Pinch
  Water 1 1⁄2 Tablespoon
  Cornflour 1⁄2 Teaspoon

Cut the chicken into 3-cm (1 in) pieces and marinate for 30 minutes.
De-seed the dried chillis and cut them into fine shreds.
Remove the peanut skins.
Fry the peanuts gently in 4 tablespoons of oil for 5 minutes, until they are lightly browned.
Deep-fry the chicken for 2 minutes and drain well.
Heat 1 tablespoon of oil and fry the chilli shreds until they are black.
Then add the ginger and chicken and stir-fry for 30 seconds.
Add the seasoning sauce and stir well.
Add the peanuts and serve.
