Chicken And Nut Stir Fry
|Macadamia/Vegetable oil||1 Tablespoon|
|Onion||1 , cut|
|Grated ginger||2 Tablespoon|
|Boneless chicken breast||4 , thinly sliced|
|Pear||1 , peeled, cored and cut into thick slices|
|Ground black pepper||To Taste|
|Macadamia nuts/Brazil nuts||2 Ounce, chopped (60 Gram)|
|Ginger lime sauce||1 Tablespoon|
|Lime ginger marinade||1 Tablespoon|
|Chicken stock||4 Fluid Ounce (125 Milliliter)|
|Lime juice||1 Tablespoon|
1. To make sauce, place marmalade, stock and lime juice In a bowl and mix to combine. Set aside.
2. Heat oil in a wok over a medium heat, add onion and ginger and stir-fry for 3 minutes or until onion is golden. Increase heat to high, add chicken and stir-fry for 5 minutes or until chicken is brown. Remove chicken mixture from wok, set aside and keep warm.
3. Add pear to wok and stir-fry for 3 minutes or until golden. Return chicken mixture to wok, add sauce and stir-fry for 3 minutes or until sauce thickens slightly. Season to taste with black pepper. Scatter with nuts and coriander and serve immediately.
