Fragrant Lemon Chicken
|Chicken||1 Kilogram (1 Chicken)|
|Olive oil||1 Tablespoon|
|Lemon juice/Lime juice||3 Tablespoon|
|Bay leaf||1 (Tej Patta)|
|Garlic||4 Clove (20 gm), chopped|
|Freshly ground black pepper||1⁄2 Teaspoon|
|Fresh basil leaves||6 , chopped|
Cut chicken into 4 pieces.
Remove and discard skin.
Wash and drain thoroughly.
Arrange in a single layer in a flat dish.
Combine ingredients for marinade, rub into chicken, cover and refrigerate for 6-8 hours, turning over once or twice.
Heat a tandoor, barbecue or grill till medium-hot.
Lay chicken on rack and grill for about 10 minutes, basting frequently with marinade.
Turn over and cook for about 10 minutes longer till chicken is tender.
