Blackened Chicken Skewers

Ingredients
  Boneless, skinless chicken breast 10 Ounce, diced (300 Gram)
  Cajun seasoning mix 1 Tablespoon
  Lemon juice 2 Tablespoon
  Olive oil 1 Teaspoon
  Coriander sprigs 1 (For Garnish)
  Boiled rice 1 Cup (16 tbs) (For Serving)
  Green salad 1 Cup (16 tbs) (For Serving)
Directions

Place the chicken in a bowl and add the seasoning mix, lemon juice and olive oil.
Toss well and leave to marinate for 15 minutes.
Meanwhile, soak 8 wooden skewers in warm water.
Drain the skewers and thread the pieces of chicken on to them.
Cover the ends of the skewers with foil, place under a preheated medium grill and cook for 20 minutes, turning over halfway through cooking.
When the chicken is cooked through, remove from the grill and reserve any juices.
Remove the chicken from the skewers and garnish with coriander sprigs.
Serve with the juices, boiled rice and a green salad.
